This flaky and buttery pear and blueberry rustic tart is a dream! The sweet and tart flavor of the blueberries enhances the sweet earthy notes of pears. A layer of sweet cream cheese not only adds more texture and flavor but also protects the crust from getting soggy. Bits of bleu cheese and roasted walnuts add so much contrast and make this tart extra flavorful. It’s a simple pleasure that you can have anytime!

I’m so happy I made this pear and blueberry tart! It’s been a while since I’ve made my buttery and flaky pie crust. I guess I ate too much pie in previous years so pies and I decided we needed a break. But who’s kidding? I missed them a lot and when I took out my food processor and made a crust in less than 10 minutes, I realized we shouldn't have never part ways. I have to say it was my fault you know, I was lured by all the buns and puff pastries trending on Instagram. But now I’m back to it and I’m not letting go! I hope they missed me too!

If making a pie crust is pretty easy, making a rustic tart such a galette or a crostata it’s way even easier. Roll the dough, drop almost anything you want to and bake. If only everything in life would be as easy as making this rustic pear and blueberry tart.

When my love story with pies was on, I made this pretty comprehensive post called “A Pie Guide” with lots of tips when making pie crust and pies and the detailed recipe for my homemade flaky and buttery pie dough recipe. You can check it out and use ½ recipe for the pie crust since we will only need 1 disk. You can make the complete recipe as well and freeze the second disk. Or, just because I think life should always be about complicating less and enjoying more, you can use a good quality store-bought pie crust as well. However, when you see how easy really it’s to make my pie dough, you’ll probably be doing it all the time!

Now that the love story is back on, I’m planning on refreshing that post with new tips, pics and video. In the meantime, check all my notes and the detailed recipe there and use it to make this juicy and delicious pear and blueberry tart.

Once you have the pie crust ready, smear some sweetened cream cheese on the bottom. This layer not only adds texture and flavor but also protects the dough from absorbing too much liquid and getting soggy. When making these type of tarts, you can use frangipane, peanut butter or even Nutella besides cream cheese. 

Next arrange the pear slices in clusters of 5 to 6 slices and arrange them over the cream cheese. Add blueberries in the middle. Fold in pie dough edges and bake! After baked, you can add pieces of bleu cheese and roasted walnuts for extra texture and a nice salty note. The combination of the bleu cheese with the blueberries and the pears is mind blowing!

What you’ll need

A sturdy large baking sheet. This one here is exactly mine.

Pre-cut parchment paper is simply a must because they make everything easier.

A reliable kitchen scale.

A straight large rolling pin.

Rustic Pear and Blueberry Tart



Ingredients

◯ 1 disk from my pie dough recipe
◯ Full fat cream cheese, softened - 3 ounces
◯ Natural granulated sugar - 2 TBSP + 1 TBSP
◯ Large pears, cored and thinly sliced - 2
◯ Blueberries - 1 cup
◯ Butter, melted - 2 TBSP
◯ Honey - 1 TBSP
◯ Egg for egg wash
◯ Coarse grain sugar such as Demerara or Turbinado (preferred), or extra granulated sugar - about 1 TBSP
◯ Bleu cheese and roasted walnuts to serve

 

Details

Yield:
an 9” rustic tart

Total time:
2 hours, including chilling time for the dough

Active time:
10 minutes for making the dough, 10 minutes for assembly

Baking time:
30 minutes

Equipment:
food processor, parchment paper, rolling pin, baking sheet

 

Steps:

Make and stretch the pie dough according to recipe. Work it over a parchment paper to be transferred to a large baking sheet.

Preheat oven to 400°.

Mix the cream cheese with the 2 tablspoons or a bit more of sugar. Spread it over pie crust, leaving about ½” of the border clear.

Arrange pears in clusters of 5 to 6 slices on top of the cream cheese. Drop blueberries in the middle. Fold edges towards the center, covering just about ½” of the bottom of the pears.

Mix melted butter and honey and brush over fruits just until covered. Mix throughly the egg with ½ teaspoon of water or milk and brush the edges of the dough. Sprinkle coarse grain sugar (or regular sugar) over the fruit and dough edges.

Carefully pull parchment paper and transfer it to the baking sheet. Place in the oven and bake for 25 to 30 minutes, until blueberries are a bit bubbly and edges are deep golden brown.

Turn oven off and leave door open. Let the galette rest there for 15 to 20 minutes. Remove from oven. You may serve now or let it cool down completely.

Sprinkle roasted walnuts and pieces of bleu cheese on top. Sprinkle a bit of regular sugar on top if desired.

Leftovers can be in the kitchen counter for a few hours, then store in an airtight container in the fridge. Reheat in a countertop oven at 350° for 5 to 7 minutes and then let it cool down with the door open.
